Kopi Luwak is the most expensive coffee in the world, reaching up to 300 euros per kg for it, and is one of the culinary pillars of Indonesia. Apparently its marked aroma and its sweet, caramelized flavor and with notes of chocolate make it a real delicacy, the bad thing is that it is obtained from the feces of a small jungle mammal called a civet. The basis of the civet's diet is the best ripe coffee cherries and it is the enzymes in its stomach and intestines that give them a refined flavor and remove the bitterness before being defecated. The faeces are collected, the coffee beans are separated and washed and prepared for serving.
